  1. 1 teaspoon vegetable oil

  2. 3 rashers bacon, diced

  3. 1 medium onion, finely chopped

  4. 250ml passata

  5. 125ml black rum

  6. 1 lemon, juiced

  7. 5 tablespoons dark brown soft sugar

  8. 1 dash hot chilli sauce

  1. Place vegetable oil, bacon and onion in a medium frying pan over medium high heat. Cook until bacon is evenly brown and onion is tender.

  2. Stir passata and rum into the frying pan with bacon and onion, and reduce heat. Simmer about 2 minutes. Mix in lemon juice, dark brown soft sugar and chilli sauce. Continue to simmer about 8 minutes.
