  1. 1 pound bulk sausage, cooked and drained

  2. 1 (9-inch) unbaked pie shell

  3. 2 cups (8 ounces) shredded cheddar cheese

  4. 3 large eggs, lightly beaten

  5. 1 (16-ounce) jar tomato salsa - divided use

  6. 1 (4-ounce) can diced green chiles

  7. 1/2 teaspoon chili powder

  8. 1/4 teaspoon ground cumin

  9. 1 tablespoon chopped fresh cilantro

  10. 1 cup (8 ounces) sour cream

  1. Preheat oven to 375°F (175°C).

  2. Place sausage in bottom of pie shell; sprinkle with cheese.

  3. Combine eggs,1 1/4 cups salsa, chiles, chili powder, cumin; mix well. Pour over cheese and sausage mixture.

  4. Bake for 30 to 35 minutes or until a knife inserted near center comes out clean. Garnish with cilantro. Serve with remaining salsa and a dollop of sour cream.
