  1. 1/2 cup 118ml Pearled barley

  2. 1 cup 237ml Frozen peas - thawed

  3. 4 oz 113g Cooked turkey - cubed

  4. 1/4 cup 36g / 1 1/3oz Coarsely-chopped red bell pepper

  5. 1/4 cup 36g / 1 1/3oz Coarsely-chopped yellow bell pepper

  6. 2 Green onions - sliced

  7. 2 tablespoons 30ml Olive oil

  8. 1/2 teaspoon 2 1/2ml Finely-shredded lime peel

  9. 2 tablespoons 30ml Lime juice

  10. 1/4 teaspoon 1 1/3ml Salt

  11. 1/4 teaspoon 1 1/3ml Poultry seasoning

  12. 1 Ground red pepper

  1. Recipe Instructions Cook barley according to package directions; drain and rinse. In a large mixing bowl combine cooked barley, peas, turkey, sweet pepper, and onion. For the dressing, in a screw-top jar combine oil, lime peel, lime juice, salt, poultry seasoning, and ground red pepper. Cover and shake to mix. Pour over barley mixture. Toss to coat. Cover and chill 4 hours or overnight.
