  1. 1 tablespoon sherry vinegar

  2. 3 tablespoons olive oil

  3. 1/2 teaspoon cracked black pepper

  4. 1 teaspoon salt

  5. 2 cups arugula leaves, washed

  6. 2 cups watercress leaves, washed

  7. 1/2 cup thinly sliced button mushrooms

  8. 1/2 cup halved cherry tomatoes

  9. 1/2 shallot, thinly sliced

  1. In a medium bowl, whisk together, the sherry vinegar, olive oil, cracked black pepper and salt. Set aside.

  2. In a large bowl add all the remaining ingredients. Drizzle the dressing over the salad, toss and serve.
