  1. Instructions Put lamb shoulder in a roasting pan and roast for 25 minutes. While lamb is roasting, boil the endives in salted water for about 20 minutes. Remove from water. Place endives around the lamb. Season. Finish cooking together in the oven, about 10 minutes. Then serve.
