  1. 4 skinless boneless chicken-breast halves -- (about 1 pound)

  2. 1/2 teaspoon salt

  3. 1/4 teaspoon black pepper

  4. 1/4 cup all-purpose flour

  5. 1 tablespoon olive or vegetable oil

  6. 1 teaspoon oil

  7. 1 onion -- chopped

  8. 2 cloves garlic -- crushed

  9. 28 ounces crushed tomatoes

  10. 1 teaspoon dried oregano

  11. 1/4 teaspoon crushed red pepper

  12. 1/4 teaspoon salt

  1. Preparation : Season chicken with salt and pepper; dredge in the flour. In large skillet, heat the oil over medium heat. Add chicken; cook 10 minutes, turning once. Transfer to a plate. Reserve the drippings. Add oil, onion and garlic to the pan; cook for 5 minutes. Stir in tomatoes, oregano, crushed red pepper and salt. Simmer for 10 minutes to thicken. Meanwhile, cut chicken into strips and stir into the sauce. Serve with pasta or rice. Add Parmesan cheese if desired.
