  2. PEACHY PIZZA DESSERT

  6. 2 c Unbleached flour

  7. 2 ts Baking powder

  8. 1/3 c Butter

  9. 2 tb Yeast

  10. 3/4 c Warm water

  11. 2 tb Maple syrup

  12. Filling:

  13. 2 lb Fresh peaches, pitted and -sliced

  14. 1/3 c Fresh lemon juice

  15. 1/4 c Unbleached flour

  16. 1/4 ts Nutmeg

  17. 1/4 c Butter

  18. 1/4 c Maple syrup

  19. 1/4 c Graham cracker crumbs

  20. CRUST:

  21. For the crust, combine flour and baking powder; cut in

  22. butter. Dissolve yeast in warm water and maple syrup.

  23. Let sit for 5 minutes, then stir into flour mixture,

  24. blending well. Turn onto floured board and knead

  25. lightly for 5 minutes, adding flour as necessary. Let

  26. dough rest for 10 minutes. Using a floured rolling

  27. pin, roll out the dough to fit either a cookie sheet

  28. or round 10-inch pizza pan. Transfer dough to oiled

  29. pan. If the dough is too sticky to lift from board to

  30. pan, then, using your hands, pat the dough into the

  31. pan you will use. Pinch up edges 1-inch all the way

  32. around cookie sheet or pizza pan to form rim.

  33. Slice peaches and pour lemon juice on top; set aside.

  34. Cut together flour, nutmeg, butter, maple syrup and graham cracker crumbs. Spread and sprinkle half of it

  35. over the bottom of the pizza dough. Arrange the peach slices on the dough, in layers if necessary. Sprinkle

  36. remaining mixture on top of peaches. Bake at 350

  37. degrees 25-30 minutes. Serve warm or cooled.

  38. Even if you have never worked with yeast before,

  39. you'll find this crust quite easy.
