  2. Title: SAUTEED EGGPLANT WITH TOMATO-GARLIC SAUCE

  5. 1 ea Eggplant

  6. Salt

  7. Extra virgin olive oil

  8. 10 oz Can tomatoes with liquid

  9. 1 ea Chopped tomato

  10. 1 tb Tomato paste

  11. 2 tb Water

  12. 2 ts Mashed garlic

  13. 2 ts Vinegar

  14. Cut stem off eggplant. Remove stips of skin with a

  15. vegetable peeler. Cut lengthwise in half, then

  16. crosswise into 1/4 thick slices. Spread on a cookie

  17. sheet & sprinkle with lots of salt. Put in a colander

  18. & set aside for 4 hours.

  19. Rinse well & drain. Heat oil in skillet & fry

  20. eggplant slices over a high heat till they are golden

  21. brown on all sides. Drain.

  22. Pour off all but 1 tb olive oil. Mash tomatoes with a

  23. fork & put into skillet. Simmer, stirring often, 5 to

  24. 10 minutes, until they form a thin sauce. Blend in

  25. tomato paste & water. Cook 1 minute. Stir in garlic

  26. & vinegar & remove from heat.

  27. Arrange eggplant slices on a serving dish & pour over

  28. sauce. Serve warm as part of a buffet.
