  1. Gado Gado (Javanese Salad)

  2. 2 tablespoons sambal oelek (or substitute dried crushed red chile peppers)

  3. 1/4 cup finely chopped onion

  4. 1 tablespoon minced fresh ginger

  5. 2 cloves garlic, minced

  6. 1 tablespoon peanut oil

  7. 2/3 cup natural peanut butter

  8. 1 1/4 cup unsweetened canned coconut milk

  9. 2 tablespoons soy sauce

  10. 2 tablespoons brown sugar

  11. 1 tablespoon lemon juice

  12. Use the plain, natural type of peanut butter, not the sweetened

  13. American kind.

  14. Saute onions, garlic, and ginger in the oil until softened. Stir

  15. in the remaining ingredients. Bring to a boil, stirring constantly.

  16. Reduce the heat and simmer until thickened, about ten minutes.

  17. Depending on the peanut butter's consistency, you may need to add

  18. more or less coconut milk to get the proper sauce.

  19. 2 blocks fresh tofu

  20. 2 cups shredded cabbage

  21. 2 large potatoes, boiled until tender and cut into strips

  22. 1/4 pound cooked green beans, cut into 3 inch pieces

  23. 2 cups bean sprouts

  24. 1 carrot, shredded or julienned

  25. 1 cucumber, sliced

  26. 2 scallions, sliced

  27. 2 sliced hard-boiled eggs

  28. 1 cup chopped roasted peanuts

  29. In a pan of simmering water or vegetable stock, poach the tofu for 8-10 minutes. Remove, drain and cool. Cut into cubes.

  30. Layer the vegetables as follows: cabbage first, then cucumbers,

  31. potatoes, green beans, sprouts, carrots, and tofu cubes. Place egg

  32. slices around the edge. Top with the peanuts and scallions. The

  33. sauce should be warm when served with this salad.

  34. Gado Gado is typically served with kroepoek, which is basically a

  35. deep-fried, puffed shrimp cracker and very difficult to find in

  36. the States. The Dutch company Conimex supplies it in uncooked form

  37. for those who have deep fryers.

  38. Gado Gado makes an excellent accompaniment for spicier dishes like

  39. Ebony Chicken or Sate, and for fried plantains.
