  1. 4 boneless chicken breast halves

  2. 1 heaping tablespoon honey Dijon mustard

  3. salt and coarsely ground black pepper or seasoned pepper

  4. 2 packages (8 ounces each) baby spinach, or 1 pound washed and dried fresh spinach leaves

  5. 2 tablespoons butter, cut in small pieces

  1. Grease slow cooker or spray with cooking spray. Wash chicken breasts and pat dry. Rub chicken with honey mustard; sprinkle with salt and pepper. Place chicken breasts in slow cooker. Top with spinach. Spinach can be packed in, or add spinach in parts, as spinach cooks down and wilts, if your pot is too small for all of it. Dot spinach with butter and sprinkle with more salt and pepper. Cover and cook on LOW for 5 to 6 hours.

  2. Serves 4.
