  4. 1/2 teaspoon(s) fresh-ground pepper

  5. 1/2 teaspoon(s) light-brown sugar

  6. 1 tablespoon(s) olive oil

  7. 4 (1-inch-thick, about 2 pounds) bone-in center-cut pork loin chops

  1. Heat grill to medium-high. Stir together the salt, mustard, chili powder, pepper, and brown sugar in a small bowl. Trim about 1 inch of the meat along the rib bone to create a handle. Brush the pork chops with the olive oil and pat 1 1/2 teaspoons of the dry mixture onto each. Grill, turning once, until cooked through -- 9 to 12 minutes. (Two minutes before removing, brush with your favorite barbecue sauce, if desired.) Serve immediately.
