  2. 1 tablespoon 15ml Minced garlic

  3. 4 cups 250g / 8.8oz Canned plum tomatoes - drained and chopped

  4. 1 tablespoon 15ml Fresh oregano - minced

  5. 1/2 teaspoon 2 1/2ml Red pepper flakes

  6. 2 tablespoons 30ml Drained capers

  7. 12 Black olives - halved

  8. 1 Anchovies - drained and minced (2 oz can) Salt - to taste Pepper - to taste

  9. 2 tablespoons 30ml Minced fresh parsley

  10. 2 tablespoons 30ml Minced fresh basil.

  11. 1 lb 454g / 16oz Cooked pasta

  1. Recipe Instructions To a large saucepan add the olive oil and minced garlic. Saute it briefly. Then add the plum tomatoes, fresh oregano, red pepper flakes, capers, and black olives. Cover the pan and simmer the sauce for 10 minutes, then uncover and simmer 10 more minutes, stirring occasionally. To the reduced sauce add the anchovies, and season to taste with salt and pepper. Simmer 5 minutes longer to heat through and blend the flavors. Sauce the pasta in a large pasta bowl. Sprinkle on the parsley and basil.
