  1. 1 pound carrots -

  2. 1 sweet red pepper -

  3. 1/2 cup raisins or dried cranberries -

  4. 1/4 cup salted roasted sunflower seeds -

  5. 1/4 cup bottled vinaigrette dressing, or to taste -

  6. 2 tablespoons chopped parsley

  1. Peel carrots and grate coarsely, or shred in a food processor. Dice pepper or cut into matchsticks and add to carrots. Stir in raisins and sunflower seeds and toss with vinaigrette. Sprinkle with parsley and serve.
