  1. 2 tablespoons 30ml Extra-virgin olive oil

  2. 1 Red onion - diced

  3. 2 Garlic cloves - chopped

  4. 2 Bell peppers - seeded, chopped

  5. (yellow, red, and/or green)

  6. 1 Asparagus - sliced on bias,

  7. And tips 1 1/2" long

  8. 2 cups 125g / 4.4oz Frozen corn kernels

  9. 1 Butter beans - drained

  10. Salt - to taste

  11. Freshly-ground black pepper - to taste

  12. 1 Handful flat-leaf parsley - chopped

  1. Heat a medium skillet over medium-high heat. Add oil, onion, garlic, peppers. Saute peppers, stirring frequently, 5 minutes. Add asparagus and corn, cook 3 to 5 minutes longer.

  2. Add beans and heat them through, 1 or 2 minutes. Season dish with salt and pepper, to your taste, then stir in parsley. Transfer to dinner plates or bowls and serve.

  3. This recipe yields 4 servings.
