  13. 3 tablespoon(s) butter

  14. 2 tablespoon(s) flour

  15. 1 1/2 cup(s) milk

  16. 1/2 cup(s) shredded sharp Cheddar cheese

  1. Preheat oven to 400 degrees F. Sift flour, baking powder, and 1/2 teaspoon salt.

  2. Cut in shortening with a pastry blender or 2 knives. Add 1/2 cup milk and egg; mix just enough to combine ingredients.

  3. Knead dough and roll out on a floured board into a 14-inch by 12-inch rectangle about 1/4 inch thick.

  4. Combine tuna, parsley, onion, and remaining 1/4 cup milk. Add 1/2 teaspoon salt and relish, mixing well. Spread on dough; roll up as for a jelly roll. Place, seam side down, on a greased cookie sheet. Bake 40 minutes.

  5. Prepare Cheese Sauce: Melt 3 tablespoons butter in a small saucepan. Blend in 2 tablespoons flour and cook for 1 minute; stir in 1 1/2 cups milk and continue cooking until smooth and thick. Remove from heat; add 1/2 cup shredded sharp Cheddar cheese, stirring until melted. Makes about 1 3/4 cups.

  6. To serve, slice tuna roll and serve hot with cheese sauce.
