  1. 250g green papaya

  2. 2 tablespoons lime juice

  3. 1 tomato

  4. 2 scotch bonnet/birds eye chillies

  5. 2 tablespoons palm sugar

  6. 2 tablespoons fish sauce

  7. 50g long green beans

  8. 1 tablespoon shrimp paste or fish sauce

  9. 1 tablespoon unsalted peanuts, chopped

  10. 1 clove of garlic

  1. Grate papaya, deseed tomato & slice 1cm pieces and quarter the beans.

  2. Roughly chop the garlic then add all the other ingredients into a mortar and pestle. Pound the ingredients until the papaya becomes soft.

  3. Serve immediately to avoid becoming soft.
