  5. 1 tb Olive oil

  6. 1 Onion, chopped

  7. 4 cl Garlic, minced

  8. 1/2 lb Mushrooms, sliced

  9. 1 c Cooked brown rice

  10. 1 c Carrots

  11. 1 c Whole wheat bread crumbs

  12. Salt and pepper to taste

  13. 1 tb Fresh parsley, minced

  14. Cayenne to taste

  15. 1 Egg, lightly beaten

  16. Heat olive oil in a skillet over medium high heat.

  17. Add onions and garlic and saute until onions are soft.

  18. Remove from heat.

  19. Place mushroom mixture in food processor outfitted

  20. with steel blade. Add rice and carrots and pulse a

  21. few times until mixture has a mealy consistency.

  22. Transfer to a large bowl and add bread crumbs and parsley. Mix well and season with salt, pepper and cayenne. Stir in egg. Shape into six patties and broil on a lightly greased baking sheet until browned,
