  2. OKRA WITH TOMATOES & ONIONS

  6. 2 lb Fresh young okra

  7. 3/4 lb Onion -- sliced thickly

  8. 6 tb Olive oil

  9. 3 Garlic cloves -- halved

  10. 1 lb Tomatoes -- skinned & sliced

  11. Salt and black pepper

  12. 1 Lemon (juice only)

  13. Wash okra. Cut off any hard stems and dry okra

  14. thoroughly. Heat oil in large saucepan and fry onions

  15. with the halved garlic cloves until slightly soft,

  16. transparent, and golden. Add okra and continue to fry

  17. until slightly softened. Add the sliced tomatoes and saute for a few min. longer. Season to taste with salt

  18. and pepper. Cover with water, bring to a boil and simmer until the okra is very tender, usually about 1

  19. hour. Squeeze in the lemon juice and cook for a

  20. 15 min.

  21. will be much shorter. Serve hot or cold. If to be

  22. served cold, allow to cool in the saucepan before

  23. turning out into a serving dish. Recipe from "A Book
