  1. cooking oil

  2. 4 medium sized potatoes, diced

  3. 1 large onion, finely chopped

  4. 2 red chillies, finely choppped

  5. 1 x 400g tin chopped tomatoes

  6. 450ml chicken stock

  7. 100ml dry white wine

  8. 1 or 2 teaspoon cayenne pepper (depending on your tastes!)

  9. 1 teaspoon garlic salt

  10. salt

  11. fresh ground black pepper

  12. 4 haddock loin fillets, diced

  13. 6 rashers smoked back bacon, cut in small pieces

  14. 300ml water (if stew has reduced a lot)

  1. Heat a little cooking oil in a large casserole dish or saucepan.

  2. Add the diced potatoes, chopped onions and red chillies and saute until golden Add the tinned tomatoes, chicken stock, dry white wine, cayenne pepper, garlic salt, salt and pepper and bring to the boil, then cover and simmer for 20 minutes stirring occasionally Stir in the haddock loins and bacon pieces and add the water (if your stew has reduced a lot) then simmer covered for another 20 minutes, stirring occasionally.

  3. Add more salt and pepper to taste and serve with crusty bread or rice.
