  1. 4 boneless pork loin chops

  2. 1 onion, chopped

  3. 3 cloves garlic, minced

  4. 1 (16 ounce) package baby carrots

  5. 1 (15 ounce) can pinto beans, rinsed and drained

  6. 1 (15 ounce) can black beans, rinsed and drained

  7. 1 (14 ounce) can diced tomatoes, undrained

  8. 1 (8 ounce) jar taco sauce

  9. 1 tablespoon chili powder

  10. 1/8 teaspoon cayenne pepper

  11. 1 cup water

  12. 2 tablespoons cornstarch

  1. In 4-5 quart slow cooker, combine all ingredients except cornstarch. Cover and cook on low for 8-9 hours until pork is cooked and vegetables are tender. Remove pork chops from stew and cut or shred into small strips; return to crockpot. In small bowl, combine cornstarch with an additional 1/4 cup water and add to crockpot; stir well, then cover and cook for 30 minutes on high. Stir and serve over rice, couscous, or polenta.
