  1. 5 cups chicken stock

  2. 2 tsp. Asian chili garlic sauce

  3. 6 lime leaves

  4. 3 stalks lemongrass , white part only, cut into 1" lengths

  5. 1/4 cup thinly sliced galangal

  6. 1 tsp. chopped fresh red chilies

  7. 1 cup thinly sliced fresh mushrooms

  8. 1/2 cup corn kernels

  9. 8 oz. diced shrimp or chicken

  10. 2 tbsp. fish sauce

  11. 1/2 cup diced fresh pineapple

  12. 1/4 cup lime juice

  13. 2 tbsp. chopped fresh coriander

  14. 2 green onions , thinly sliced

  1. In a saucepan, combine stock, chili sauce, lime leaves, lemongrass, galangal and chilies.

  2. Bring to a boil. Cover. Reduce heat and simmer for 20 minutes.

  3. Strain the broth.

  4. Add mushrooms, corn, shrimp and fish sauce. Simmer for 2-3 minutes, or until shrimp is just cooked.

  5. Add pineapple, lime juice, coriander and green onions and heat for 1 minute.

  6. Serve.
