  1. 7 1/2 cups flour

  2. 2 1/2 teaspoons salt

  3. 3 3/4 cups sugar

  4. 10 teaspoons baking powder **STREUSEL TOPPING MIX**

  5. 1 1/4 cups brown sugar

  6. 10 teaspoons cinnamon

  7. 1 1/4 cups flour

  8. 5 tablespoons soft margarine

  1. Preparation : Cake mix: Combine the ingredients and store in covered container. Streusel mix: Combine dry ingredients. Cut in margarine until crumbly. Store, covered, in refrigerator. NOTE: The amount in this mix should make 5 coffee cakes. For Streusel Coffee Cake - Combine 2 1/2 cups mix with a mixture of 1/4 cup vegetable oil, 1 beaten egg, and 1/2 cup milk. Spread into greased 8x8 inch pan. Top with the streusel topping mix (approximately 3/4 cup per recipe). Bake at 375 for 25 minutes.
