  1. 1 cup chopped onions

  2. cup vegetable stock

  3. 1 tablespoon sweet Hungarian paprika

  4. 1 cup pureed plum tomatoes

  5. 4 cups peeled potatoes cut into inch slices

  6. teaspoon salt

  7. Additional salt and black pepper to taste

  8. Vegetable oil for cooking

  9. Heat oil in pot and cook onions until softened. Carefully add stock, paprika and pureed tomatoes before bringing to a boil. Add potatoes, salt and pepper, reduce to a simmer and cook until potatoes are done.
