  1. 3 cups 711ml Water

  2. 1 tablespoon 15ml Salt

  3. Juice of 1/2 lemon

  4. 1 lb 454g / 16oz Fresh asparagus - trimmed

  5. 1 teaspoon 5ml Olive oil

  6. 4 Halibut filets - (6 to 7 oz ea)

  1. For Asparagus: Over high heat, bring bring water and a pinch of salt to a boil. Add asparagus and boil for 2 minutes (water should just cover asparagus). Remove asparagus from water and set aside.

  2. For Halibut: In a medium saucepan over high heat, bring water, salt and lemon juice to a boil. Next, place halibut filets in boiling water and turn heat down to medium. Poach for 7 to 8 minutes. Remove from water, drain, place on serving plates and top with cooked asparagus. Drizzle lightly with olive oil and serve.
