  1. 4 tb Butter

  2. 4 sl Bacon, chopped

  3. 1 c Onion, chopped

  4. 1 c Clams, minced, drained of -liquid

  5. 2 c Potatoes, cooked, peeled and -diced

  6. 1/4c Parsley, chopped

  7. 1/4ts Salt

  8. 1/8ts Pepper

  9. 4 tb Grated Parmesan cheese

  1. + Directions : Melt butter in skillet. Add bacon and fry until crisp. Drain bacon on absorbent paper. Saute onion until transparent. Add potatoes, clams, parsley, salt and pepper. Press down with a spatula and cook over moderately high heat until bottom is brown. Turn it with a spatula, mixing some of the crust throughout. Press down again and cook until bottom is again brown. Top with cheese and bacon bits. Cover tightly and cook for about 1 minutes, until cheese melts. Serve immediately, garnished with a parsley sprig.
