  2. 1 cup 62g / 2 1/5oz Can corn - drained

  3. 1 cup 146g / 5.1oz Red bell pepper - diced (small)

  4. 1/2 cup 31g / 1.1oz Green onions - sliced

  5. 1/2 cup 118ml Picante sauce

  6. 2 tablespoons 30ml Vegetable oil

  7. 2 tablespoons 30ml Cider vinegar

  8. 1/2 teaspoon 2 1/2ml Ground cumin

  9. 1/4 teaspoon 1 1/3ml Salt

  10. 2 tablespoons 30ml Cilantro, chopped - opt

  1. Recipe Instructions Combine potatoes, corn , pepper, and onions in medium bowl. Combine picante sauce, oil, vinegar, cumin and salt, mix well. Gently toss with potato mixture, chill. Sprinkle with cilantro, and serve with additional picante sauce.
