  1. 3 large eggs -

  3. 1/2 cup lime juice, fresh zest from

  4. 1/2 lime -

  5. 6 tablespoons butter -

  6. 1 pinch salt few drops of green food coloring

  1. Iin saucepan mix eggs and sugar, beating until smooth. Add juice, zest, butter and salt. Cook over medium-low heat, stirring constantly and scraping down pan sides frequently, until mixture is very thick, about 10 minutes. Remove from heat and, if using food coloring, add it a drop at a time, stirring in each addition. Don't overdo the color. Pour or scrape into a lidded container. It will keep well for a week if refrigerated.
