  1. 1/2 cup 55g / 1.9oz White sesame seeds

  2. 1/2 cup 118ml Basic dashi - see recipe

  3. 1/2 to 1/4 cup 59ml Dark soy sauce - (1/4 to 1/2)

  4. 2 tablespoons 30ml Mirin

  5. 1 tablespoon 15ml Sugar

  6. 1 tablespoon 15ml Sake

  7. Cayenne pepper - to taste

  1. Toast the sesame seeds in a heavy pan until lightly browned. Transfer warm seeds to a mortar and grind to a paste, or whirl in a blender.

  2. Add the dashi, soy sauce, mirin, sugar and sake, and mix well, using a spatula to blend and smooth the sauce.

  3. Add cayenne to taste. Pour sauce into individual cups.
