  5. 2 Whole veal shanks

  6. Flour

  7. 4 tb Butter

  8. 1 ts Salt

  9. 1/2 ts Pepper

  10. 1/2 c Celery; finely chopped

  11. 1/2 c Carrots; finely chopped

  12. 1 md Onion; finely chopped

  13. 1 Garlic clove; minced

  14. 1/2 c Mushrooms; minced

  15. 1/2 ts Sage, crumbled

  16. 1/2 ts Rosemary

  17. 1 lg Ripe tomato; peeled, seeded

  18. - and chopped 2 c White wine

  19. 1 Lemon; rind grated

  20. 2 tb Parsley; chopped

  21. 1 Anchovy ; mashed

  22. 6 Servings of cooked rice

  23. Cut two veal shanks into 2-inch pieces. Roll shanks

  24. in flour and saute in butter over high heat until

  25. brown on all sides. Add salt, pepper, celery, onion,

  26. carrots, mushrooms, tomato, sage, and rosemary.

  27. Reduce heat, cover and braise for 10 minutes. Add

  28. white wine. Cover and gently simmer for 2 hours. The

  29. liquid should barely cover the meat. Just before

  30. serving, stir in the gremolada. This consists of the

  31. grated lemon rind, parsley, anchovy, and garlic.

  32. Serve with cooked rice.
