  1. 1/2 poblano chile pepper, diced (about 1/3 cup)

  2. 1/3 cup diced onion

  3. 1 garlic clove

  4. 1/2 teaspoon salt

  5. 1/4 teaspoon freshly ground black pepper

  6. 1/2 cup ketchup

  7. 1/3 cup tomato juice

  8. 2 tablespoons hot sauce

  9. 1 tablespoon lemon juice

  10. 1 tablespoon orange juice

  11. 1 teaspoon honey

  12. 1 pound fresh calamari tubes, rinsed

  13. Tomato Sauce

  1. Process first 11 ingredients in a food processor or blender 1 minute or until smooth.

  2. Blanch calamari 1 minute in 8 cups of lightly salted boiling water. Plunge calamari into ice water to stop cooking process. Drain and combine with pepper mixture in a medium bowl.

  3. Serve warm or chilled in 6 glasses, and top with Tomato Sauce.
