  1. Crockpot Garlic Meatballs in Lemon Sauce

  2. 1 1/2 lbs mince beef

  3. 3 slices bread, torn into soft crumbs

  4. 4 cloves garlic, crushed

  5. 2 Tbsp chopped parsley

  6. 2 Tbsp chopped mint

  7. 1 tsp paprika

  8. 1 tsp salt

  9. pepper to taste

  10. 2 eggs

  11. 8 oz can tomato sauce

  12. grated rind of 2 lemons

  13. 1/4 cup lemon juice

  14. salt and pepper to taste

  15. 1 Tbsp minced mint

  16. Combine all ingredients for the meatballs and form into walnut-sized

  17. balls. Place in crockpot. Mix the sauce ingredients together and pour over the meatballs. Cover and cook on LOW 4 - 6 hours. Serve

  18. with rice.
