  1. Creamed Peas

  2. 1 (10 oz.) pkg. frozen peas

  3. 1 tbsp. butter

  4. 1 tbsp. all-purpose flour

  5. 1/2 tsp. salt

  6. 1/2 tsp. dry mustard

  7. Dash of white pepper

  8. Dash of nutmeg

  9. 1 c. warm milk

  10. In a covered saucepan, cook peas in boiling, salted water until

  11. tender, about 10 minutes. Drain peas well. Meanwhile, melt butter

  12. in saucepan over low heat. Blend in flour, salt, white pepper,

  13. nutmeg and dry mustard. (Using a wire whisk is the best). Add warm

  14. milk all at once; cook and stir until thickened and bubbly. Pour

  15. over hot vegetables; stir to coat vegetables.
