  1. 1 baby bock Choi, rinsed and cut into 1 bunch Swiss chard , rinsed and cut into 1" pieces

  2. 1/2 onion , thinly sliced

  3. 1 can quartered artichoke hearts , water packed

  4. 1 tsp. garlic , thinly sliced

  5. 2 Tbls virgin olive oil

  6. Salt , pepper , crushed chili to taste

  7. 4-6 eggs

  1. Sauté Baby Bock Choi in olive oil with garlic, then sauté Swiss chard.

  2. Combine all ingredients.

  3. Spray with non stick spray, a 10” cast iron frying pan, or 1:’ deep dish that is 10” in diameter.

  4. Place ingredients into pan, then add eggs that have been whipped.

  5. Bake at 350 degrees for 30-35 minutes until firm to the touch in the center.

  6. Let set for 15 minutes and flip onto a plate, twice, so the original side is up.
