  6. : 1/2 c finely chopped onions

  7. : 3/4 c chicken stock

  8. : 2 c green peas

  9. : 1/2 c finely chopped fresh

  10. : parsley

  11. : 1/4 c finely chopped fresh

  12. : coriander (cilantro)

  13. : 1/2 ts sugar

  14. : Salt

  15. : freshly ground black pepper

  16. : 1/4 lb garlic-seasoned pork sausage

  17. : cut in thin

  18. : strips

  19. : 4 egga

  20. In a heavy 10 in skillet, melt the butter over moderate heat. When

  21. the foam has almost subsided, add the onions, and, stirring

  22. frequently, cook for eight to ten minutes, until golden. tir in the

  23. stock, peas, parsley, coriander, sugar, 1/4 teaspoon of salt and a

  24. few grindings of pepper, and overlap the sausage slices around the

  25. edge of the pan in a circle. Bring to a boil over high heat, then

  26. reduce the heat to low, cover and simmer for five minutes. Break the

  27. eggs into the skillet, keeping them well apart. Sprinkle the eggs

  28. lightly with salt and pepper. Cover and cook for three or four

  29. minutes, until the egg whites are set. Serve at once.
