  2. CHORIZO QUICHE IN CORNMEAL CRUST

  6. --CORNMEAL CRUST--

  7. 1/2 c Cornmeal

  8. 3/4 c Sifted flour

  9. 1/2 ts Salt

  10. 1/8 ts Black pepper

  11. 1/3 c Shortening

  12. 4 tb -cold water (or more)

  13. --FILLING--

  14. 6 sl Monterey Jack cheese

  15. 1/2 lb Chorizo -- casings removed

  16. 1/4 c Sliced green onions

  17. 4 Eggs

  18. 2 c Whipping cream

  19. -ÿÿHalf and Half

  20. Salt, pepper

  21. To make crust, sift together cornmeal, flour, 1/2

  22. teaspoon salt and pepper. Cut in shortening until

  23. mixture resembles coarse crumbs. Add water, 1

  24. tablespoon at a time, stirring lightly until mixture

  25. forms ball. Turn out onto lightly floured board and 13-inch circle. Fit loosely into 9-inch

  26. pie plate or quiche pan. Fold edge under and flute.

  27. Arrange cheese slices on bottom of crust. Fry sausage

  28. until cooked and crumbly. Drain off fat. Sprinkle

  29. sausage on top of cheese, then top with green onions.

  30. Lightly beat eggs in bowl, stir in whipping cream and season to taste with salt and pepper. Pour over cheese

  31. and chorizo mixture. Place on bottom rack of oven and 15 minutes. Reduce heat to

  32. 350F and bake

  33. 25 to 30 minutes. Let stand 10 minutes

  34. before cutting.
