  1. 2 1/2kg leg of lamb

  1. Preheat the oven to 180 C / Gas 4. Transfer the leg to a roasting tin and roast for 1 1/4 hours.

  2. After one hour, remove the lamb from the oven and baste with the juices. Place back in the oven.

  3. After 15 minutes, remove and slice, keeping the juices. Transfer the lamb back into the roasting tin, leave for a few minutes to absorb all the flavours, then serve.
