  1. For cake:

  2. 1 stick (8 tablespoons) unsalted butter

  3. 4 ounces fine-quality bittersweet chocolate (no more than 60% cacao if marked)

  4. 3/4 cup sugar

  5. 1 teaspoon pure vanilla extract

  6. 3 large eggs, beaten to blend

  7. 1/2 cup all-purpose flour

  8. 3 tablespoons unsweetened Dutch-process cocoa powder

  9. 1/2 teaspoon salt

  10. For the cream:

  11. 1/2 cup cold heavy cream

  12. 1 tablespoon sugar

  13. 1/2 teaspoon raspberry extract

  14. 2 drops red food coloring

  15. Garnish: fresh raspberries

  16. Equipment: a 9-inch heart-shaped baking pan
