  1. 1 1/2 pounds red potatoes, unpeeled

  2. 1/2 cup chopped green bell pepper

  3. 1/2 cup chopped red bell pepper

  4. 1/2 cup chopped yellow bell pepper

  5. 1/2 cup chopped celery

  6. 1/2 cup pitted ripe olives, halved

  7. 1/4 cup chopped flat-leaf parsley

  8. 2 green onions, thinly sliced

  9. 1/2 cup olive oil

  10. 1/4 cup spicy brown mustard

  11. 3 tablespoons fresh lemon juice

  12. 1 teaspoon salt

  13. 1 teaspoon dried oregano, crumbled

  14. 1/8 teaspoon freshly ground pepper

  1. Wash and quarter potatoes. Cook potatoes in boiling water to cover 10 minutes or until tender; drain.

  2. Place potatoes in a large bowl. Add next 7 ingredients; toss gently.

  3. Combine olive oil and remaining ingredients in a bowl; stir well.

  4. Pour dressing over vegetable mixture and toss gently to combine. Cover and chill.
