  1. 4 Red snapper fillets

  2. Flour - for dredging

  3. 1/3 cup 48g / 1.7oz Finely-chopped parsley

  4. 1 cup 146g / 5.1oz Garlic clove - finely chopped (large)

  5. 3 oz 85g Olive oil

  6. 1 1/2 cups 93g / 3 1/3oz Canned peeled tomatoes

  7. 2 oz 56g White wine

  1. Cut the red snapper into 4 pieces. Dredge in flour and fry gently in a hot skillet with oil without cooking completely. Remove the fish.

  2. In the same pan saute the parsley and garlic in oil quickly, being careful not to let them burn. Add the tomatoes and white wine and let simmer for 10 minutes. Add the fish and simmer, covered, for another 10 minutes. Do not stir or the fish will fall apart.

  3. This recipe yields 4 servings.
