  1. 1 1/2 lbs 681g / 24oz Beef flank steak

  2. 1 cup 62g / 2 1/5oz Chopped onion

  3. 1 Green sweet pepper - cut thin slices

  4. 1 Jalapeño pepper - chopped

  5. 1 tablespoon 15ml Cilantro

  6. 2 Garlic cloves - minced

  7. 1 teaspoon 5ml Chili powder

  8. 1 teaspoon 5ml Ground cumin

  9. 1 teaspoon 5ml Ground coriander

  10. 1/2 teaspoon 2 1/2ml Salt

  11. 1 Chopped tomatoes - (8 oz)

  12. 12 Flour tortillas

  13. Optional Toppings

  14. Sour cream

  15. Guacamole

  16. Shredded cheddar cheese

  17. Salsa

  1. Cut flank steak into 6 portions. Combine meat, onion, green sweet pepper, jalapeño pepper, cilantro, garlic, chili powder, cumin, coriander and salt in crock-pot. Add tomatoes. Cover nd cook on LOW for 8 to 10 hours or on HIGH 4 to 5 hours.

  2. Remove meat from slow cooker and shred. Return meat to slow cooker. Stir.

  3. To serve fajitas, spread meat mixture into flour tortillas and add toppings if desired. Roll up tortillas.

  4. This recipe yields 12 servings.
