  1. 500g minced pork

  2. cup finely chopped roasted capsicum

  3. cup chopped basil

  4. 2 tablespoons tomato sauce

  5. 2 tablespoons barbecue sauce

  6. 1 garlic clove, crushed

  7. 4 sheets puff pastry

  8. cup grated tasty cheese

  9. rocket and extra sauce,

  10. to serve TOPPING

  11. 5 large potatoes, peeled,

  12. cut into chunks 1/3 cup milk

  13. 20g butter

  1. Preheat oven to hot, 200°C. Lightly grease 2 x 12-cup muffin pans.

  2. TOPPING : Cook potatoes in a large saucepan of boiling, salted water for 10-15 minutes, until tender. Drain well and tip into a bowl. Mash together with milk and butter. Season.

  3. Meanwhile, heat a large frying pan on high. Brown mince for 3-4 minutes, breaking up with a wooden spoon as it cooks. Add capsicum, basil, sauces and garlic. Stir through and cook for 1 minute.

  4. Using a 10cm cutter, cut 16 rounds from pastry. Push pastry into recesses. Spoon mince mixture into pastry cases. Pile mashed potato on top.

  5. Sprinkle with cheese. Bake for 25-30 minutes, until pastry is crisp and topping is golden. Serve hot pies with rocket salad and extra sauce.
