  1. 1 tablespoon olive oil

  2. 1 pound ground turkey

  3. 1 cup onion, thinly sliced

  4. 2 cloves garlic, minced

  5. 1 1/2 teaspoons dried oregano

  6. 1 teaspoon dried mint

  7. 3/4 teaspoon salt

  8. 1/4 teaspoon ground black pepper

  9. 4 cups cubed eggplant

  10. 1 cup chopped green pepper

  11. 1 teaspoon sugar

  12. 1 medium tomato, peeled, seeded and chopped

  13. 1 tablespoon crumbled feta cheese

  1. In a large nonstick skillet over medium-high heat, heat oil, add turkey, onion, garlic, oregano, mint, salt and pepper, cook about 5 to 6 minutes or until meat is no longer pink. Remove turkey mixture from skillet and set aside.

  2. In same skillet over medium-high heat, cook eggplant and green pepper about 4 minutes or until vegetables are crisp-tender. Combine turkey mixture with vegetable mixture. Stir in sugar and tomato. Cook mixture, over medium-high heat, about 4 to 5 minutes or until heated throughout. To serve, top turkey mixture with feta cheese.
