  1. 3 cups chopped onion s (Approximately 2 large onions)

  2. 2 TBSP. olive oil

  3. 2 tsp. kosher salt

  4. 1 tsp. black pepper

  5. 1/2 tsp. thyme

  6. 1/3 cup Worcestershire sauce

  7. 3/4 cup chicken stock

  8. 1 1/2 teaspoons tomato paste

  9. 5 pounds ground turkey breast

  10. 1 1/2 cups plain dry bread crumbs or crackers

  11. 3 egg s, beaten

  12. 3/4 cup ketchup

  1. Preheat oven to 325 degrees. In a medium sauté pan, over medium-low heat, cook the onions, olive oil, salt, pepper, & thyme until onions are clear, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, & tomato paste & mix well. Allow cooling at room temperature. Combine the ground turkey, bread or cracker crumbs, eggs, & onion mixture in a large bowl. Mix well & shape into a loaf pan or a deep casserole dish. Spread the ketchup evenly on top. Bake for 1½ hours or until done. (A pan of hot water, or bath in the oven under the meatloaf will keep the top from cracking.) Lynn Byers McClellan
