  1. 8 c Cornbread, crumbled

  2. 2 c Bread slices, crumbled

  3. 1 1/2 c Onion chopped

  4. 2 c Celery chopped

  5. 1 c Pecans chopped

  6. 1 1/2 ts Thyme

  7. 1/2 ts Sage

  8. 1/4 ts Savory

  9. Salt and pepper to taste

  10. 4 Eggs beaten

  11. 3 c Turkey giblet broth

  12. Pan juices from turkey

  13. 1 Onion quartered

  14. 2 Celery stalk tops w/leaves

  15. Turkey giblets and neck

  1. This is what Southerners eat with turkey.

  2. Make broth by cooking turkey giblets and neck in water with onion, celery tops, salt and pepper to taste.

  3. Mix cornbread, loaf bread, onions, celery, pecans and seasonings.

  4. Add well beaten eggs and enough broth to make a very moist mixture.

  5. (You don't want it to dry out in baking.

  6. ) Add some of the cooking juices from the turkeky, including a small amount of fat, to supplement broth and heighten flavor.

  7. Bake at 350 degrees for 25-30 minutes.
