  2. POTATO PANCAKES 2

  7. 1 c All-purpose flour

  8. 2 ts Baking powder

  9. 1 1/2 ts Salt

  10. 1/2 ts Pepper

  11. 2 Eggs

  12. 1/4 c Butter, melted or margarine

  13. 1 c Milk

  14. 3 c Potatoes, grated

  15. 3 tb Onion, finely chopped

  16. Grate potatoes just before using to prevent

  17. discolouration. Combine all ingredients in a bowl and beat until well blended then add grated potatoes. Drop

  18. in spoonfuls in large amounts of hot fat in a fry pan.

  19. Spread out flat. Fry on medium heat until crisp and golden brown on under side. Turn and brown the other

  20. side. Serve with sour cream or apple sauce or both. - - - - - - - - - - - - - - - - - -
