  1. 8 boneless chicken thighs, pounded thin (about 2 pounds)

  2. 1/2 cup prepared honey mustard

  3. Salsa:

  4. 1 medium cucumber, peeled, seeded, chopped

  5. 2 cups red or green seedless grapes (or a combination of the two), cut in half

  6. 1/4 cup lime juice (1 teaspoon lime peel, optional)

  7. 2 tablespoons olive oil

  8. 1/4 teaspoon salt

  9. 1/4 teaspoon freshly ground black pepper

  1. Prepare grill. Brush both sides of thighs with honey mustard and set aside. In medium bowl, combine all ingredients for salsa and set aside. Grill until just firm. Serve chicken immediately salsa spooned alongside.
