  3. 3 tbsp dark soy sauce

  4. 2 tbsp light soy sauce

  5. 1 tbsp sugar

  6. 1/2 tsp msg

  7. 1/2 tsp pepper

  8. 3 tbsp oil and 3 tbsp lard

  9. 4 tbsp water

  1. Wash and drain threadfin Marinate fish in A for 30 minutes.

  2. Heat oil in a non-stick wok and fry the fish over moderate heat till brown. Reserve the marinade. Turn fish over, cover pan and cook till fish is done. Remove lid, pour in the marinade and the 4 tbsp water and cook for ½ minute. Remove to a serving plate. Serve hot or cold.
