  2. 250 gram rice

  3. 50 milliliters oil

  4. 1/2 teaspoon mustard seeds

  5. 1 teaspoon urad dal

  6. 1 teaspoon chana dal

  7. 4 red chiles -- cut into pieces

  8. 2 sprigs curry leaves

  9. 2 1/2 cm ginger -- julienne

  10. 2 green chiles

  11. 1/2 teaspoon turmeric powder

  12. 1/4 teaspoon asafetida

  13. salt to taste

  14. 2 lemons -- juice of

  15. 100 gram cashew nuts -- fried

  16. 50 grams coriander leaves -- chopped

  1. BOIL rice until three-fourths done and cool. Heat oil and season with mustard seeds, urad dal, chana dal, red chile pieces and curry leaves. Add chopped ginger and stir lightly. Add green chiles and toss. Add turmeric powder, asafetida and salt. Toss the cooked rice in this mixture, sprinkle lemon juice and cook for a few minutes more. Serve hot, garnished with fried cashew nuts and chopped coriander leaves.
