  1. 4-6 middle-cut bacon , rind trimmed

  2. butter , for spreading

  3. 2 slices crusty white bread , or brown

  4. 2 plum tomatoes

  1. Heat a griddle pan then add the bacon and fry about 4 minutes on each side, until crisp.

  2. Butter the bread. Lay the bacon on top of one of the slices of buttered bread, so the hot bacon melts into the butter. Layer on the sliced plum tomatoes and season. Place the other slice of buttered bread on top.
