  2. 2 T canola oil

  3. 1/2 t cayenne pepper

  4. 1 t chopped garlic cloves

  5. 2 C chopped cabbage

  6. 3 C cubed sweet potato es (1 inch cubes)

  7. 3 C tomato juice

  8. 1 C apple juice

  9. 1 t salt

  10. 1 t minced or grated fresh ginger

  11. 1 T chopped fresh cilantro

  12. 2 chopped tomato es

  13. 2 C chopped fresh okra

  14. 1/2 C peanut butter

  1. Saute the onions in the oil for about 10 minutes.

  2. Stir in cayenne and garlic and sauté for a couple more minutes. Add cabbage and sweet potatoes and sauté for a few more minutes. Mix in the juices, salt, ginger, cilantro and tomatoes. Cover and simmer for about 15 minutes, until the sweet potatoes are tender.

  3. Add the okra and simmer for 5 minutes more.

  4. Stir in the peanut butter and simmer very gently until ready to serve. Add more juice or water if the stew is too thick.
